Soft & fluffy cheesy bacon egg cups

This is an high protein go-to snack when you're stuck for time. Eat on their own, as a side, or keep them stored to easily heat up as and when you need them:


Cheesy Bacon Egg Cups

Per Egg Cup:

58 kcal, 7g Protein, 3g Fat, 1g Carbs


Ingredients:

Main Ingredients:

  • 2 Large Eggs

  • 250ml Egg whites

  • 3 Rashers of Bacon (can be substituted with turkey bacon or meat free alternative)

  • 50g Reduced fat cheddar cheese

  • 50g Spinach


Optional Seasoning: to taste

  • Salt

  • Pepper

  • Paprika

Instructions:

  1. Preheat oven to 180°C and grease a muffin tin.

  2. Add your bacon to a pan and fry until fully cooked.

  3. Chop your bacon into pieces, grate cheese, chop spinach, and add to a mixing jug along with your eggs/ egg whites

  4. Stir together until fully combined and equally distribute mixture between 9 cups in your baking tray

  5. Place in oven and cook for 10-15 minutes until golden brown on top. Remove the egg cups from the oven and set them in a baking rack for 10 minutes. Serve them right after or store them in an airtight container for up to 4 days.
